Vegan Nutella Pumpkin Bread

There’s nothing better than filling your home with the scent of warm autumn spices as the cool days of fall roll in. Here in America, we are uniquely obsessed with pumpkin spice compared to the rest of the world. The flavor occupies much of our baking and cooking now through the end of November. As an ode to the American classic, I’ve veganized pumpkin bread and added one of my favorite cool weather flavors- hazelnut.

I’ve made this recipe many times and I must say, it’s become one of my favorite fall recipes. The nutty, rich flavor of the hazelnuts, complements the pumpkin pie spice perfectly- it’s so delicious. While traditional Nutella is not vegan, I’ve included vegan versions of Nutella you can buy along with a recipe you can easily make at home.

Instructions:

  1. Preheat oven to 350°F.
  2. In a large bowl, whisk together flour, sugar, baking soda, baking powder, salt, nutmeg, cinnamon, and cloves.
  3. In a second bowl, combine pumpkin, melted butter, egg replacement, milk, and vanilla. Mix well.
  4. In the large bowl, make a well in the center of your dry ingredients. Pour in wet ingredients and proceed to fold them into the wet ingredients, until just combined. Make sure to not over-mix.
  5. Line a 9×5 inch pan with parchment paper, then place half the batter into the pan using a spoon. After half of the batter is evenly distributed, heat the Nutella in the microwave for 10-15 seconds. Pour the Nutella evenly over half the batter. Proceed to place the remaining batter into the pan.
  6. Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let cool completely & enjoy! Store at room temperature and slice just before serving.

Optional:

  • Add ½ cup of vegan semi=sweet or dark chocolate chips towards the end of step 4. Enjoy Life brand is a favorite.
  • For Nutella lovers, before placing in the oven heat up ¼ (70g) cup of Nutella and drizzle over the top, use a knife to swirl the Nutella into the batter.
  • Top batter with chopped walnuts or pecans for additional flavor and texture.
